Parmesan Roasted Potatoes

I was looking for a side dish to go with my short ribs, and I didn't want the normal mashed potatoes. I really wanted to try something a little different and I came across a really good looking dish called Parmesan Roasted Potatoes. So I took a stab at putting my own spin on things.

I started by cutting slits into the potatoes, I really wasn't good at this, as you can see I did cut through a couple of my potatoes. Hehehehe.......

Next I placed the potatoes on a roasting pan brushed with a little of the mixture (butter, garlic, lemon juice, and salt).

Once out of the oven, I topped it with parsley and Parmesan cheese while still hot so the cheese would melt.
