The days seem to just zoom bye so quick these days, sometimes I just cant find the time to post seems like but I do find to the time to do a little cooking. This week I was asked to bake cupcakes for my daughters library reading class. Seemed like the perfect time to try out a new recipes for some cupcakes... I call these my sweet Valentine red velvet cupcakes ! Not really but the names does sound pretty sweet. One thing that I am know for are my red velvet cakes, so I thought how about I put that into a small bite.. Me and Avery decorated these together, I love the thought of having these mother daughters moments, these are the same ones I had with my mother. Enjoy!

For the Red Velvet Cup Cake:
2 1/2 cups self rising flour (recommended: White Lily) 1 teaspoon cocoa 1 1/2 cups granulated sugar 2 eggs 1 1/2 cups canola oil 1 teaspoon vinegar 1 (1-ounce) bottle red food coloring 1 teaspoon vanilla 1 cup buttermilk
For the cream cheese frosting: 1/2 cup margarine 1 (8-ounce) package cream cheese 1 box confectioners' sugar 1/2 teaspoon vanilla 1 cup chopped lightly toasted pecans Please remember to start out with your ingredients being room temperature.
