Black Eye Pea Soup

I remember a couple of years ago my cousin from Boston came to live here in Atlanta for a couple of years, and everyday I would get off work she would have the most amazing meals ready for the family. She made a black eye pea soup, something I had never heard of before, its nothing my mother cooked at the house. Seeing that I was over the traditional soul food I thought this was really out of the box. I will list the soup recipe, my key thing here is that I always use Ragin Cajun sausage I think it has the best favor. Enjoy!
