Fried Fruit Pies

My best friend's mom has an amazing Mango Tree that grows in her backyard, and what better way to try and eat all of the fruit before it goes bad. YES!!! You guessed it make fruit pies. I have never had a mango fried pie before, not sure either if its common, but one thing I do know is that these are the best mango's ever in life. :)

Filling:
8 ounces and fresh cut mango's
3/4 cup white sugar ( because that mangos are already pretty sweet)
1 tablespoon cold butter
1 teaspoon brown sugar
1 teaspoon lemon juice
1 teaspoon nutmeg
Shortening or lard for frying
Crust:
2 Pre-made Pie Crust
Directions:
To make the filling, place the peaches in a saucepan over medium heat. Add lemon juice, sugar, nutmeg and brown sugar. Bring to a boil before reducing to a simmer. Cover and let simmer for 5 minutes. Mix cornstarch with 1 tablespoon water and pour into simmering peach mixture. Bring to a boil to thicken. Remove from heat and stir in the butter before transferring to a container to refrigerate until needed.
To make the pies, prepare a clean flat surface with flour. Using a round cutter, cut into circles 5-6 inches across. Place a heaping tablespoon of the chilled filling in the center of your dough circle. Please make sure to not over fill. You want some exposed dough around the edges. Using your fingers, wet the outer edge of you egg wash of water to help the dough seal. Carefully fold the dough in half and use a fork to secure the two sides together.
When ready for frying, fill a skillet over a medium heat. Carefully place one pie at a time in the hot oil until golden brown. Remove and drain on a paper towel and dust with cinnamon and sugar mixer.
